As promised, dear friends, here’s more from my British kitchen – a lovely fruit cake which I only tried for the first time very recently, and it’s quite easy to do!
Ingredients:
150g blueberries, 250g flour, 200g caster sugar, 100g butter, 2tsp baking powder, 1 egg, 150ml milk, 30g icing sugar, 1tsp vanilla sugar, salt, oil
Mix the sugar and the butter in a big bowl with a hand mixer or a whisk, then add the egg, the flour, the milk, the vanilla sugar, the baking powder and a dash of salt and stir well until the mixture is creamy. Preheat the oven to 180°C.
Slowly stir in the blueberries with a spoon, then put the mixture in an oiled baking tin and bake in the oven for 45-50 minutes. Dust with icing sugar before serving!
